Low-Calorie Vegan Breakfast Burritos

Thanks to Courtney over on the 'Courtney Loves Carbs' vegan blog for this tasty, vegan recipe! Make sure to add this one to your next meal prep rotation! This batch recipe creates 20 breakfast burritos that are easily stored in the freezer! Simply pop one in the microwave in the morning and go.

INGREDIENTS

  • 1 Batch Seitan O' Greatness (or 2 blocks of extra firm tofu, pressed and diced)

  • 2-3 TSP Minced Garlic

  • 1 Large Yellow Onion, diced

  • 3 Large Bell Peppers, sliced (or one bag frozen)

  • 1 16 oz Bag Frozen Corn (or 1 can)

  • 1 14 oz Can Diced Tomatoes, drained

  • 2 14 oz Cans Black Beans (or ~ 1 1/2 cup dry, already soaked & cooked)

  • 1 Cup Nutritional Yeast

  • 1 TSP Salt

  • 1/2 TSP Chipotle Chili Powder

  • 1 TSP Lime Juice

  • 20 Soft Taco Tortillas
